Frazer hand-dives for king scallops off the coast in Brixham on his boat, Sun Rise.  He started diving after learning about the destruction to the seabed the dredged scallop industry wreaks and wanted to be able to offer people an alternative.  He is in the sea year-round – quite something on a cold day in January ! so long as visibility permits.  He goes to these lengths so we can appreciate some of nature’s most sublime tasting gifts, his scallops are unbeatable in texture and sweetness.
